A Witbeer is a refreshing, elegant, tasty, moderatestrength wheat-based ale. It has a moderate malty sweetness with light notes of honey and/or vanilla. It also has a spicy wheat aroma with moderate coriander aroma and herbal, spicy or peppery notes in the background. It can also have moderate zesty, citrusy-orangey fruitiness. The color oft he beer varies from pale straw to very light gold. It’s a very cloudy beer which comes from starch haze or yeast and the outcome is a milky, white-yellow appearance. The head is dense, white and moussy. It has a medium-low hop bitterness and has a medium/medium light body. The beer does not age well so younger and fresher ones are better. Witbeer is a 400-year-old Belgian beer style that died out in the 1950s; it was later revived by Pierre Celis at Hoegaarden, and has grown steadily in popularity over time, both with modern craft brewers and mass-market producers who see it as a somewhat fruity summer seasonal beer.
